Inspired by our desire to nurture people through food and wine, each month we host an intimate multicourse dinner inside our large open-air pavilion space. This month, we are thrilled to be offering Wagyu beef sourced from Hiroshi Ranch.

In 2016, the Lischwe family founded the ranch, located in Kaiser, Missouri. The family farm is home to full-blood Wagyu cattle being bred and raised to provide the Lake and surrounding areas with premium Wagyu beef. Tim, Kalise and their children all work together on the farm. The cattle at Hiroshi Ranch are on a diet that includes organic cacao powder, flax seed oil, and pirella oil mixed with molasses. This mixture adds to the flavor of their meat, presenting a slight chocolate flavor. It's like nothing you've ever tasted before, and the meat just melts in your mouth!

MENU

COURSE ONE Wagyu Steak Salad mixed greens, shredded carrot, blue cheese, fuji apple, Tony’s cherry tomatoes, candied nuts, tossed in a balsamic walnut vinaigrette

COURSE TWO Wagyu Potsticker stuffed with smoked sweet potato and ginger, green onion, served with a yum-yum dipping sauce

COURSE THREE Wagyu Slider topped with brie cheese, onion and pear chutney, and applewood bacon aioli, served on a brioche bun

COURSE FOUR Seared Wagyu Strip Steak sous vide, served with a creamy morel mushroom sauce on top of fried smashed red potatoes.

COURSE FIVE Strawberry Shortcake two buttermilk white chocolate cakes layered with whipped cream, pineapple jam, macerated strawberries, and toasted coconut
